Nisei Ski Club Recipe Corner – Applesauce Coffee Cake- The New York Times

by Karen Soo, Newsletter Editor

October brings us the World Series, a chill in the air and fall foliage.

This warmly spiced, moist apple cake is the cozy breakfast, afternoon snack or dessert that dreams are made of. The top is covered with a generous layer of crumble that’s spiced with cinnamon or your favorite pumpkin spice blend and caramelized on the edges, which adds delicious toasty flavor and wonderful crunchy texture. The topping is at its most crisp the day that it is baked, but the cake stays soft and delicious for a few days when stored in an airtight container at room temperature. Brew a cup of tea or coffee, slice a piece of cake and enjoy these cozy flavors in any season.

Bon Appetite – Julia Child and Karen Soo share the same birthday.

Makes 16 Servings

Ingredients

For the Crumble

  • 3/4 cup unsalted butter, cut into pieces and softened, plus more for greasing the pan
  • 2 cups all-purpose flour
  • 1 (packed) cup light brown sugar
  • 2 teaspoons pumpkin spice or ground cinnamon
  • 1 teaspoon kosher salt (such as Diamond Crystal)

For the Cake

  • 1 (packed) cup light brown sugar
  • 2 large eggs
  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup sour cream
  • 1/2 cup neutral oil (such as vegetable, canola or grapeseed)
  • 1 tablespoon pumpkin spice or ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons kosher salt (such as Diamond Crystal)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3 cups all-purpose flour

Instructions

1. Heat oven to 350 degrees. Butter a 9-by-13-inch baking pan (or spray with nonstick cooking spray). Line the pan with a piece of parchment paper that hangs over the two long sides.

2. Make the cake: In a large bowl, use a whisk or electric mixer to mix the brown sugar and eggs until pale and foamy. Add the applesauce, sour cream, oil, pumpkin spice, vanilla and salt, and whisk until well combined.

3. Whisk in the baking powder and baking soda, then use a flexible spatula to fold in the flour just until combined. Pour the batter into the prepared pan and smooth the top. Sprinkle the crumble evenly over the top.

4. Bake until puffed and golden and a cake tester inserted into the center comes out clean or with a few moist crumbs, 35 to 45 minutes. Set the cake in the pan on a rack to cool slightly. Use the parchment paper to lift the cake out of the pan before slicing and serving. (The topping is at its most crisp the day that it is baked, but the cake stays soft and delicious for a few days when stored in an airtight container at room temperature.)

NSC President’s Message, September 2025

by Armand Gutierrez, President

I can tell it’s September by the number of ski resorts and travel agents sending me flyers to bring NSC on ski vacations.  And ever since I took the 2019 FWSA Hakuba Valley trip I’m still receiving emails from Rhythm Japan, the local ski rental shop near the hotel where we stayed. As we get closer to ski season the emails will increase, but I’m pretty good at hitting the Trash icon.

NSC Annual Membership Meeting/Luau Picnic

The NSC Annual Membership Meeting/Luau Picnic held on Sunday, August 10th, turned out to be one of the most attended and one for the books. Not only did the weather cooperate, but also the surprise Appreciation announcement for Frank Chang came as a total surprise. Not only to him but also to everyone in attendance (including the board members). There was a variety of cuisine to dine upon and numerous games to play, I would also like to thank those caring members that brought a “warm coat” for our first-ever One Warm Coat Drive.

One Warm Coat Drive

Our first-ever One Warm Coat Drive was a great success and many thanks to those members that donated coats. There were a total of 33 coats (13 men’s, 13 women’s, and 7 kids). As I was sorting them out it amazed me that many of the coats were in very good condition and a few of them still had new tags on them. This really shows the generosity of our membership and I’m looking forward to this being an annual event to help out people in need.

Website Update

The website has been updated to include two videos related to skiing: Group Travel, and Travel Insurance. The Group Travel article focuses on how group travel for domestic ski trips has changed over the past few years and is presented by Sara Clemons, president of Sports America Tours (our tour operator), and the Travel Insurance is for both domestic and international travel. You can view the videos by going to the Safety+Travel tab.

A Chilean Ski Adventure. July 31- August 11, 2025

by Armand Gutierrez, President

Last month I fulfilled a long-time desire to ski in Chile, in particular the Valle Nevado ski resort located just 2-hours outside of Santiago. The FWSA Chile trip had been in the works for about five years and finally came to fruition.

Getting There

There were 52 participants from various ski clubs and the group was divided into two groups: those on the SFO-MIA-SCL flight (layover in Miami), and those on the LAX-SCL (non-stop) flight. Unfortunately, the LAX-SCL flight experienced engine trouble just two hours into the flight and had to return to LAX and the group had to spend the night. Meanwhile, the SFO flight arrived in Miami with a 6-hour layover and then continuing on to Santiago and arriving the next day early in the morning. I was on that flight, and I didn’t mind the layover since it gave everyone time to relax, have dinner, and then board an early morning flight to Santiago. Our group arrived on schedule on a wet and rainy Friday morning, and the other group arrived on Saturday morning and missed a day of skiing.

The bus ride to Valle Nevado was one for the books that consisted of a steep, uphill climb, on a narrow road with 41 switchbacks and numerous cars/buses going uphill and downhill. And to make it more exciting the weather changed from raining to lightly snowing as we gained elevation to 10K and the Puerta del Sol Hotel.

Skiing Valle Nevado/La Parva

Valle Nevado and La Parva are interconnected and both offer great skiing. Valle Nevado has 5 chairlifts, 1 gondola, and 7 Poma lifts, and La Parva has 5 chairlifts and 9 Pomas. Now, I’m not a big fan of Pomas, especially long and steep ones so I stuck with the more comfortable rides up the mountain. However, there was one Poma that we had to take at La Parva in order to return to Valle Nevado.

Both Valle Nevado and La Parva are above tree level and reminiscent of skiing in Europe, so there were plenty of groomed runs and a number of off-piste runs to play with. The wide-open, off-piste runs bore the tell-tail signs of good powder skiing earlier in the week, but by the time we arrived those runs were typical of heavy and hard to turn powder runs that you find at Lake Tahoe. I did find a few off-piste runs that weren’t groomed with mild bumps.

Since our group arrived on Friday we had the option of skiing six days, and that was a first for me. By the fourth day my legs were telling me that they didn’t want to ski. But, I overruled them and it showed in my form (what form?). As my ski buddy used to say: “The spirit is willing, but the flesh is weak.”

There are two dining areas on the Valle Nevado slopes for dining and restroom breaks. Baja Zero was by far the most popular and just right off the Andes Express lift. The Gondola Cantina is located at the base of the gondola and also provided a variety of food to eat, plus bathrooms. Baja Zero offered inside and outside dining, while the Gondola Cantina only offered outdoor dining. La Parva offered a single lodge with outdoor dining only. One other important item: skiing the backside of the mountain does not offer any lodges or bathrooms, so it is necessary to plan where you’re going skiing.

Some Final Thoughts

Valle Nevado is a destination ski resort given the location atop an isolated mountain, a two-hour drive up a winding road that is subject to closures due to weather, and only two hotels and a number of condos/apartments. Also, there is no village for shopping and dining, only a mini-mart with very limited food items.

There is a clinic for emergency injuries and I did see a helicopter on a helipad, but not sure if that was for medevacs. Entrance to the ski area is next to the Puerta del Sol hotel, and at the end of the day it’s necessary to take a slow beginner lift to return to the lodging area.

The Puerta del Sol hotel includes a gift shop (clothing and souvenirs), rental shop, and a locker room. Our meal plan included a buffet breakfast and dinner, and dinners where either at the restaurants in Puerta del Sol or Tres Puntes hotels. Lift tickets were also included, and there was a discount for Ikon Pass holders.

Valle Nevado can be skied in three days, and La Parva in two days, so a week of skiing is just about right. Skiing Chile was a worthwhile experience.

Nisei Ski Club Recipe Corner – Slice and Bake Green Tea Shortbread – From the Mercury News

by Karen Soo, Newsletter Editor

NSC President’s Message, August 2025

Valle Nevado Skiing

Skiing in August? Well, maybe not around here but I will be schussing Valle Nevado, Chile from 1-7 August, and then spending a few days in Santiago touring around. Unfortunately, I’m scheduled to return on 11 August and will miss the Annual Membership Meeting & Luau Picnic.

The Puerta del Sol hotel (the one with the angled roof) sits at 9,924 ft. and the top of Tres Puntas (single-person J-bar lift) is 12,641 ft. Definitely high altitude country. Unlike in the states, South American ski resorts use T-bars and J-bars (similar to pomas) quite a bit.

The NSC Annual Membership Meeting/Luau Picnic is on Sunday, August 10th, so mark your calendars. As usual the club will be providing beverages and a lunch entrée and you can bring a favorite side dish. Details are in the PICNIC FLYER HERE

NSC Members at the Yard, SF Giants Loses to the LA Dodgers

by Tina Woo, Board Member

On Sunday, July 13th, 36 friends and family participated in the inaugural Nisei Ski Club SF Giants vs LA Dodgers baseball game at Oracle Park.  Many of us arrived early and received the free promotional Spirit Jersey. Board member Curtis Otaguro met us prior to the game for lunch and “fav” Crazy Crab sandwich in the View Reserved Section.  Several NSC board members attended, as well: Frank Chang, Joel Hayashida, Jeanne Katsuro, and Roland Lee.

You could not have asked for a better pitching match-up to decide this series.  A pair of “All Stars”: one from each side: Robbie Ray for the Giants and Yoshinobu Yamamoto for the Dodgers.

The game was scoreless until the 4th inning, then with hits from Freddie Freeman and Shohei Ohtani, the Dodgers were able to score 1 run for the lead.  Miguel Rojas hit a HR in the 5th for a 2-run lead.  Yamamoto did a sensational job pitching, with 7 shutout innings.  Camilo Doval, the Giants’ closer was brought into the game in the 9th. Matt Chapman was able to get onto 1st and Luis Matos homered to tie the game in the bottom of the 9th inning.

At this point, it was a brand-new ballgame! However, the Dodgers were able to score 3 runs in the top of the 11th.  Final Score: LA Dodgers 5, SF Giants 3.  Not to mention the late game drama, nail-biting and innumerable grey hairs for the fans!

What is a Ghost Runner?  (courtesy of Sandy Kiyomura).

In MLB regular season games, if the score is tied after 9 innings, extra innings are played to determine a winner.  A key rule change places an automatic runner on second base at the start of each extra inning (10th and beyond). This runner is the player who batted immediately before the leadoff hitter (or the last guy out). This is known as the “ghost runner” rule.

This rule aims to shorten extra-inning games, reduce pitcher fatigue, and add excitement by increasing scoring opportunities.

Group Comments

“This was such a good game. My family hasn’t gone to a game in years, but my Mom often took my kids to games.”

“Yes!  Die hards to the end!  It was fun!”

“Had a great time.”

Everyone had a great time visiting with each other and enjoyed the classic rivalry between the two teams.  Come join us at the next NSC baseball game between the Giants and Dodgers on Sunday, September 14.  Please contact Tina Woo for game details. OPEN HERE FOR MORE INFORMATION

2025 One Warm Coat Drive

by Armand Gutierrez, President

The Nisei Ski Club has participated in a variety of charitable organizations, and over the past few years we have supported the Asian Pacific Film Fest, Achieve Tahoe, and a one-time donation for the victims of the Lahaina fire in Hawaii in 2023 through cash donations. Now NSC has an opportunity to make an impact on people’s lives by participating in the One Warm Coat Drive. The One Warm Coat organization https://www.onewarmcoat.org/ is a national nonprofit organization that embodies a movement of kindness through the donation of coats to people in need.

This charitable opportunity is now available to the membership and for you to join Jeanne Katsuro and I on this charitable endeavor. Jeanne, with the help of Angela Ren (member), Arlene Mori (member), and Linda Minami, already gave me ~50 coats to start the party. So how can you help? Simple. At the Annual Membership Meeting and Luau Picnic on August 10, all you need to bring is one warm coat (or more if you have them). The coats can be for adult or young kids, and should be clean and wearable (no holes or rips). The coats collected at the picnic will be picked up by Jeanne or myself, and stored until October or November when they can then be taken to one of the One Warm Coat designated drop off locations. From there they will be distributed to people in need during the Thanksgiving or Christmas season.
